Week 4 GAG 2010 Challenge

Italian Sausage and Rice(Main dish)

Italian sausages
red, yellow and orange bell peppers
Sweet onions
Olive oil

Saute' all ingredients together until sausage is brown (cover and simmer to make a light sauce
put over brown ride and enjoy













These are stuffed mushrooms and they are an appetizer I thought of out of my head and they are yummy











The recipe

Stuffed Mushrooms
Marinated chicken tenders
sweet onions
Spicy Hummus
Olive oil

Take stems from mushrooms and chop finely
Chop onions finely
saute' chicken (cut up finely) stems, onions in olive oil
when cook stir in hummus and put in mushrooms and bake for a few minutes at 350 degrees

Then enjoy






































DESSERT RECIPE

This is a chocolate lovers sweet tooth's dream but you can substitute whether flavor you want. It is only chocolate pudding, cool whip, cream cheese

1 Cup Flour(I used unbleached flour) I don't know if that was the best choice
1 stick of butter(I used can't believe it's not butter) tastes better with real butter
1/2 cup chopped nuts(I used pecans)
1 pkg of cream cheese(I used reduced fat)
1/2 cup powdered sugar
2 small pkgs of Chocolate pudding(I used sugar-free)
2 3/4 cups of milk(I used Almond breeze milk)
1 large container of cool whip(I used light)
Strawberries
Half pecans

The first layer

Mix flour, butter and nuts and place in the pan and press down and back for 20 minutes or until brown. Let cool

Add second layer

Mix cream cheese, powdered sugar and 1 cup of cool whip and spread on bottom layer

Add third layer

Mix pudding and milk and spread

Add 4th layer

Cool Whip and then decorate as you like

I first got this recipe from a dear lady who went to be with the Lord many many years ago and when I got it she used with coconut pudding and it was so good and she added extra coconut on top. Since then I've done many versions of it. I've used vanilla, cheese cake, banana, white chocolate pudding. Use whatever pudding you have a taste for and put whatever you want to like bananas, cherries, etc just get creative

Sometimes I like a thicker crust on the bottom so I double the crust with 2 cups of flour and 2 sticks of butter(when I'm feeling like getting more calories) lol :-)

October 21, 2010 (Meals) GAG 2010
















Here are all my meals.

This week was a good week of eating and this challenge has made me evaluate everything I've put in my mouth. Sometimes you never pay attention to what or how much until you are being held accountable. I enjoyed this challenge and look forward to learning what everyone else ate so I can incorporate some new things in my diet. What I've learned also is preparation is the key and planning and being mindful of what your eating. The thing I've failed at this week is getting in enough exercise. So that is the goal for next week. Healthy eating plus exercise should equal more than a 1 lb weight loss.

October 16, 2010 (Meals) Week 3 Challenge for GAG 2010























































I started off my day with a fruit smoothie and these were all the ingredients in it and the finished product was yummy.

For lunch I had a turkey sandwich with hummus, avocado, laughing cow cheese, lettuce, tomatoes, onions and pop chips. 22 pop chips is only 120 calories. Very good and filling....never baked or fried....just popped.

For my snacks I had fresh veggie juice with strawberries(I used my Jack Lelanne juicer). I had 1/2 cup of nuts and a protein bar. That's how I get my sweet tooth cravings filled.

For dinner I had a taco salad that white turkey meat, black beans, rotel tomatoes and taco seasonings and tomato sauce and the salad consisted of lettuce, tomatoes, cucumbers, mushrooms, and spinach.

Before bed I had a glass of water with fiber.

Mission 1 Accomplished



My first 5k was on Saturday October 9, 2010. I was very reluctant to post this picture with my time because I started comparing my time with other people's and lost sight of the accomplishment of even starting and finishing the race.

As I posted it to my facebook page I thought about all the people who would say you could have done it faster than that and every negative thought popped in my head, but I posted it anyway because I think about all the people who didn't do it at all. AT LEAST I TRIED. This 5k is a mini goal.

When I was 27 years old(I'm 37 now), my orthopedic doctor said "what is going on in your body, you have 78 yr old knees and you shouldn't be walking" I said "It's the grace of God" at that time I had already had knee surgery on both knees and was getting ready to have another one on my left knee. I was unable to walk without assistance. I had a walker and crutches and a cane. You never know how much you want to do something when you can't. I was determined to fight to walk again. Even today I still have knee problems. My Dr. said I need total knee replacement on both my knees(that was 10 yrs ago) he said I need to get real skinny skinny and come back and see him. As you can see, I'm not real skinny skinny and struggling everyday to get to a healthy weight so I can get all the pressure off my knees and not have so much pain.

With my life in God's hands, I'm choosing to believe the bible and it says I am healed and I'm doing the impossible (shall I say what people think are impossible) BUT WITH GOD ALL THINGS ARE POSSIBLE. I just want my life to be a living epistle read by men, so when I put my business out there just know I struggle with it but I know if my life can help someone realize they can do anything they put their mind too I'm willing for my life to be a living sacrifice. It's the least I can do because God has done so much for me. I pray as you read this blog you would know God has great things for you and if you just trust him with everything HE will not fail you.
